June is here, the sun is shining bright, the humidity has officially struck Tennessee and I'm excited to share this Zippy Citrus Pudding recipe with you! The best part is that I've snuck an entire 1/2 cup of chopped carrots into this vibrant mix and you'd never know it. Stealth veggies are the best! 

I was intending on putting together a thick smoothie for this recipe but with the absence of frozen bananas- it truly renders a pudding-like consistency. I'm not complaining! I've been obsessing over sour flavors recently so this pudding is SUPER citrus forward, if you don't like tart flavors then this sunshiny blend isn't for you. I, on the other hand, had been known as a child to dip lemon wedges into sugar as a summer treat. Face palm. 

This recipe is loaded down with fruits, veggie, juice and healthy fats. You could eat this on its own as a light lunch or I would suggest splitting it into two servings for midday snacks. This pudding is high in antioxidants from the citrus fruits. Although grapefruit can taste bitter alone, when mixed with the sweetness from the orange juice and mango- I find it to be perfectly balanced! Get ready for a punch of nutrition because this tangy treat is coming for you!  

Zippy Citrus Pudding (vegan) 

You need:

  • 1 lemon, juiced
  • 1/2 orange, juiced
  • 1/2 grapefruit, juiced
  • 1/4 avocado 
  • 1/2 cup chopped carrots 
  • 1 cup frozen mango 
  • 1/2 tbl chia seeds 
  • Few ice cubes
  • 1/2 tsp fresh grated ginger 

Get cooking:

  1. Add all ingredients to a high speed blender, puree until creamy.
